Cheer up with soft ginger cookies!

The other day, hubby-to-be came home from work fully stressed out and in a very grumpy mood. I have learned to stay away and keep quiet when he is like that. When I’m grumpy I want hugs and love. When he is grumpy he wants to be alone to work it out himself. I do always try to give him loves but that makes him more grumpy. You’d think I would go straight to leaving him alone! Maybe in another 8 years I will get the hint. 🙂

A special goodie was on order for the next day to help him elevate his mood. I found this recipe for soft and spicy ginger cookies on Pinterest via Manifest Vegan and thought they sounded yummy. In fact, thinking about them now makes my mouth water. I should go grab one! ( I did.) I did have to change the recipe a little bit because I didn’t have a few of the specialty ingredients but these turned out so delicious. HTB was so surprised when he got home to a big plateful of these delectable cookies. Here is my rendition of the recipe:

Soft and Spicy Ginger Cookies – Vegan

  • 1 3/4 cups + 2 tbsp AP flour
  • 1/2 cup + 1 tsp corn starch
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoons cloves
  • 1/2 cup slightly softened vegan margarine
  • 3/4 cups organic sugar
  • 2 teaspoons ground ginger
  • 1/3 cup maple syrup
  • 1 tablespoon flaxseed meal mixed with 2 tablespoons water
  • Additional sugar for rolling
Preheat the oven 350 °F.
In a medium-sized bowl whisk together the flour, corn starch, salt, baking soda, cinnamon, and cloves. Set aside.
In a large bowl cream together the margarine and sugar until smooth. Add in the ginger, syrup, and prepared flaxseed meal and mix until creamy. Gradually incorporate the flour mixture into the sugar mixture just until a fairly stiff dough forms.
Roll the dough into walnut sized balls and then roll into the additional sugar to coat. Place on an ungreased (or parchment paper covered) cookie sheet at least 2 inches apart and flatten slightly with a spoon (just until about 3/4 of an inch thick).

Bake in oven at 350 ºF for 11 minutes. Let cool additional 10 minutes before transferring to a wire rack. Cool completely before serving. (Yea, right.)

Try them! They are so tasty. And not sweet, so you don’t feel sick so fast! 🙂 This recipe actually made a good sized batch. And although we ate many last night, we have a bunch left over today! I packed a couple in HTB’s lunch box along with the left over mac and cheese.

  2. Hubby loves those horrible, crunchy gingersnaps in the boxes at the supermarket. I bet he would *really* love these. Another one to try!
