Looking for a quick and healthy weeknight dinner? I seriously threw this together in ten minutes and it was delicious!
1 package of seitan strips or cubes
1 can garbanzo beans, rinsed and drained
1-2 tbsp cooking oil (I used vegetable)
1-2 tsp sugar (to taste)
soy sauce, lemon juice, Worcestershire sauce, salt, pepper to taste
4-5 large leaves of kale, de-stemmed, washed, and torn into pieces
1/2 cup raw pine nuts
nutritional yeast for garnish
In a large frying pan heat oil over med-high heat. Add seitan.
Add a few shakes each of soy sauce, lemon juice, Worcestershire sauce. Add beans and mix. Sprinkle in sugar. Mix and let saute until beans and seitan are browned. Salt and pepper to taste.
In a large pot with a steamer insert cook kale until tender; about 6 minutes.
In a small skillet roast pine nuts over med-high heat until browned, stirring frequently to avoid burning. Remove from heat.
Use pine nuts and nooch to garnish the kale.
