Vegan Dinner: Lentils, greens, and tomatoes

This one-pan dish could not be more simple but is so yummy and versatile.

James dreamed this one up, as he often does. He is very good at putting different things together and having the product end up delicious. I wish I could do that!

For this dish we use Trader Joe’s Fully Cooked Lentils.

You could definitely cook your own lentils. I’m just lazy and haven’t gone that route yet. Plus I really dig the seasoning on these lentils – nothing to add to the recipe! We use a whole box for the two of us. We are piggies and there often aren’t any leftovers.

Lentils, greens, and tomatoes

Ingredients:

1 box of TJ’s Fully Cooked Lentils (or equivalent homemade – about a pound)

1-2 handfuls of washed baby spinach (or any green of your choosing and availability)

1-2 handfuls of baby tomatoes sliced in half

Recipe:

Spray a light mist of cooking oil into large non-stick skillet

Spread lentils out into pan and heat on medium for 3-5 minutes until thoroughly heated

Add spinach/greens and let wilt for a minute

Toss in tomato halves and mix to combine

Remove from heat and serve!

See, so very easy. And my goodness, so very tasty. I like that this recipe can be adjusted based on what you have in the fridge and need to use up. Experiment! I bet there are tons of yummy possibilities.
